Jones struck a sweet volley to give Notts the lead in the first half, before a Liam Noble free-kick wrapped up the three points in the late stages.
The win ended Port Vale's unbeaten start and has given Notts back-to-back victory.
He told Magpie Player: "It was a great day all around. We rode our luck at times, but Port Vale are a good team, on a good run and they were unbeaten before the game.
"It was a great result and it's a great feeling to make the supporters leave happy.
"They had a lot possession, a lot of corners and that's the nature of football. I thought we defended magnificently today;
"It's a massive pitch and they play very direct, but we put out bodies on the line and I think we got our two goals and everyone was fantastic.
"It's a tough place to come here and we dug in and deserved the three points.
"We've had a good start, we've surprised a few people, but that's all it is, a start and we will hoping to push on for the rest of the season."
